Ingredients
  

Dough Base
  • 8 oz sharp cheddar cheese freshly grated
  • 0.5 cup unsalted butter softened
  • 1.25 cups all-purpose flour
  • 0.25 tsp salt
  • 0.25 tsp cayenne pepper optional for heat
Filling & Garnish
  • 0.5 cup hot pepper jelly red or green
  • 2 tbsp fresh chives finely chopped

Equipment

  • Baking sheets
  • Parchment paper
  • Box grater
  • Stand mixer or hand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and freshly grated cheddar cheese until smooth and well combined.
  3. Add the flour, salt, and cayenne pepper. Mix on low speed until a crumbly but cohesive dough forms.
  4. Scoop tablespoons of dough and roll into balls. Place on baking sheet and press a thumb or teaspoon into the center to create a well.
  5. Chill the shaped dough in the refrigerator for 20 minutes to prevent spreading.
  6. Bake for 10-14 minutes until the edges are golden brown. Remove from oven.
  7. While still warm, reshape the wells if needed, then fill each center with a teaspoon of pepper jelly.
  8. Allow to cool on a wire rack and sprinkle with chopped chives before serving.

Notes

Ensure you grate your own cheese; pre-shredded cheese contains anti-caking agents that prevent the dough from binding.
