- Prepare Cherry Compote: Cook pitted cherries and ¼ cup sugar in a saucepan until juices thicken and compote is viscous. Stir in 2 tbsp Amaretto. Cool completely.
- Make Mascarpone Cream: Whisk egg yolks and ½ cup sugar over a bain-marie until thick and pale (160°F/71°C). Cool.
- Whip cold heavy cream and vanilla extract until stiff peaks form.
- Gently fold cooled egg yolk mixture into softened mascarpone until smooth. Then fold in whipped cream.
- Prepare Ladyfingers: Combine ¼ cup Amaretto with 2 tbsp cherry juice from compote. Quickly dip ladyfingers into liquid.
- Assemble: Layer dipped ladyfingers in dish. Spread half mascarpone cream, then half cherry compote. Repeat layers.
- Chill: Cover and refrigerate for at least 6 hours, or preferably overnight.
- Garnish: Dust with cocoa powder and fresh cherries before serving. Slice cold.
Notes
Ensure all cooked and mixed ingredients are thoroughly cooled before assembling to prevent a runny tiramisu. For best results, chill overnight.
