Cherry Amaretto Tiramisu

A delightful no-bake dessert featuring layers of Amaretto-soaked ladyfingers, rich mascarpone cream, and a homemade cherry compote, dusted with cocoa.

Ingredients
  

Cherry Compote
  • 1 lb fresh or frozen cherries pitted
  • 0.25 cup granulated sugar adjust to taste
  • 2 tbsp Amaretto liqueur
Mascarpone Cream
  • 2 large eggs separated
  • 0.5 cup granulated sugar
  • 16 oz mascarpone cheese softened
  • 1 tsp vanilla extract
  • 1.5 cups heavy cream cold
Assembly
  • 24-30 ladyfingers (Savoiardi biscuits) approx.
  • 0.25 cup Amaretto liqueur for dipping ladyfingers
  • 2 tbsp unsweetened cocoa powder for dusting
  • fresh cherries with stems for garnish, optional

Equipment

  • 9x13 inch baking dish
  • Large mixing bowls
  • Whisk or electric mixer
  • Small saucepan (for compote)
  • Heatproof bowl (for egg yolks)

Method
 

  1. Prepare Cherry Compote: Cook pitted cherries and ¼ cup sugar in a saucepan until juices thicken and compote is viscous. Stir in 2 tbsp Amaretto. Cool completely.
  2. Make Mascarpone Cream: Whisk egg yolks and ½ cup sugar over a bain-marie until thick and pale (160°F/71°C). Cool.
  3. Whip cold heavy cream and vanilla extract until stiff peaks form.
  4. Gently fold cooled egg yolk mixture into softened mascarpone until smooth. Then fold in whipped cream.
  5. Prepare Ladyfingers: Combine ¼ cup Amaretto with 2 tbsp cherry juice from compote. Quickly dip ladyfingers into liquid.
  6. Assemble: Layer dipped ladyfingers in dish. Spread half mascarpone cream, then half cherry compote. Repeat layers.
  7. Chill: Cover and refrigerate for at least 6 hours, or preferably overnight.
  8. Garnish: Dust with cocoa powder and fresh cherries before serving. Slice cold.

Notes

Ensure all cooked and mixed ingredients are thoroughly cooled before assembling to prevent a runny tiramisu. For best results, chill overnight.
