Ingredients
  

Filling
  • 0.5 cup unsalted butter softened
  • 3-4 cups powdered sugar sifted
  • 0.33 cup bourbon Kentucky straight preferred
  • 1 cup pecans finely chopped
  • 1 cup candied cherries finely chopped
Coating
  • 12 oz semi-sweet chocolate chips or chopped bar
  • 1 tbsp coconut oil or paraffin for shine
  • 12 candied cherries halved, for garnish

Method
 

  1. Line a baking sheet with parchment or wax paper.
  2. In a large bowl, beat softened butter until smooth. Gradually add 2 cups powdered sugar.
  3. Slowly pour in bourbon while mixing. Add remaining sugar until a stiff dough forms.
  4. Fold in chopped pecans and chopped cherries until evenly distributed.
  5. Roll dough into 1-inch balls and place on prepared baking sheet. Chill for 1 hour.
  6. Melt chocolate and oil in a microwave-safe bowl in 30-second intervals until smooth.
  7. Dip chilled balls into chocolate to coat, then return to baking sheet.
  8. Immediately top with a candied cherry half before chocolate sets. Store in refrigerator.

Notes

Let the balls sit for 2-3 days before serving to allow the bourbon flavor to mellow.
