- Line a baking sheet with parchment or wax paper.
- In a large bowl, beat softened butter until smooth. Gradually add 2 cups powdered sugar.
- Slowly pour in bourbon while mixing. Add remaining sugar until a stiff dough forms.
- Fold in chopped pecans and chopped cherries until evenly distributed.
- Roll dough into 1-inch balls and place on prepared baking sheet. Chill for 1 hour.
- Melt chocolate and oil in a microwave-safe bowl in 30-second intervals until smooth.
- Dip chilled balls into chocolate to coat, then return to baking sheet.
- Immediately top with a candied cherry half before chocolate sets. Store in refrigerator.

Let the balls sit for 2-3 days before serving to allow the bourbon flavor to mellow.
