Ingredients
  

Gingerbread Treats
  • 0.5 cup unsalted butter 1 stick
  • 10 oz mini marshmallows plus 1 extra cup reserved
  • 0.25 cup unsulfured molasses
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.125 tsp ground cloves 1/8 tsp
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 6 cups crispy rice cereal
Vanilla Icing
  • 1.5 cups powdered sugar sifted
  • 2-3 tbsp heavy cream or milk
  • 0.5 tsp vanilla extract
  • 2 tbsp powdered sugar extra, for dusting

Equipment

  • 8x8 or 9x9-inch baking pan
  • Parchment paper
  • Large mixing bowl
  • Heavy-bottomed saucepan
  • Rubber Spatula

Method
 

  1. Line an 8x8 or 9x9-inch baking pan with parchment paper, leaving an overhang. Lightly spray with non-stick spray. Place the 6 cups of cereal into a very large mixing bowl.
  2. In a large saucepan over low heat, melt the butter.
  3. Once melted, whisk in the molasses, ginger, cinnamon, nutmeg, cloves, vanilla, and salt until smooth.
  4. Add the 10 oz bag of mini marshmallows. Stir constantly over low heat until 90% melted. Remove from heat immediately.
  5. Pour the spiced marshmallow mixture over the cereal. Add the reserved 1 cup of mini marshmallows. Gently fold with a greased spatula until all cereal is coated.
  6. Transfer mixture to the prepared pan. Using greased hands or a spatula, very gently press the mixture into an even layer. Do not pack it down tightly! Let set for 30 minutes at room temp.
  7. Whisk together the powdered sugar, cream, and vanilla until smooth and spreadable. Spread evenly over the set treats.
  8. Let icing set for 15 minutes, dust with powdered sugar, lift out of the pan using the parchment, and cut into squares.

Notes

Do not overheat your marshmallows or pack the treats into the pan too tightly, or they will be hard! Use fresh marshmallows for the best texture.
