- Halve and pit the avocado. Scoop flesh into a bowl and mash with lime juice, salt, pepper, and diced red onion.
- Slice your cooked chicken breast thinly. If using raw chicken, season and pan-sear until cooked through first.
- Lay out bread slices. Place a slice of cheddar cheese on two of the slices.
- Layer the chicken on top of the cheddar. Spread the avocado mash generously over the chicken.
- Add tomatoes and top with the shredded Monterey Jack cheese.
- Place the remaining bread slices on top to close the sandwiches.
- Spread butter or mayonnaise on the top outer slice of bread.
- Heat a skillet over medium-low heat. Place sandwich butter-side down in the pan.
- Butter the side now facing up. Cover pan with a lid and cook 3-4 minutes until golden.
- Flip sandwich and cook uncovered for another 3 minutes until cheese is fully melted. Slice and serve.
Notes
Using a lid for the first half of cooking helps melt the cheese without burning the bread.
