Chicken Avocado Melt Sandwich

A crispy, cheesy grilled sandwich loaded with juicy chicken breast, creamy smashed avocado, and melted cheddar on sourdough bread.

Ingredients
  

Sandwich Base
  • 4 slices sourdough bread thick cut
  • 2 tbsp butter or mayonnaise for grilling
  • 4 slices sharp cheddar cheese
  • 0.5 cup shredded Monterey Jack or mozzarella
Filling
  • 1 cup cooked chicken breast sliced or shredded
  • 1 large avocado ripe
  • 2 tbsp red onion finely diced
  • 0.5 cup tomato diced or sliced thin
  • 1 tsp lime juice
  • 1 tbsp fresh cilantro chopped (optional)
  • 1 pinch salt and pepper to taste

  • Cast Iron Skillet or Panini Press
  • Chef's knife
  • Cutting board

Method
 

  1. Halve and pit the avocado. Scoop flesh into a bowl and mash with lime juice, salt, pepper, and diced red onion.
  2. Slice your cooked chicken breast thinly. If using raw chicken, season and pan-sear until cooked through first.
  3. Lay out bread slices. Place a slice of cheddar cheese on two of the slices.
  4. Layer the chicken on top of the cheddar. Spread the avocado mash generously over the chicken.
  5. Add tomatoes and top with the shredded Monterey Jack cheese.
  6. Place the remaining bread slices on top to close the sandwiches.
  7. Spread butter or mayonnaise on the top outer slice of bread.
  8. Heat a skillet over medium-low heat. Place sandwich butter-side down in the pan.
  9. Butter the side now facing up. Cover pan with a lid and cook 3-4 minutes until golden.
  10. Flip sandwich and cook uncovered for another 3 minutes until cheese is fully melted. Slice and serve.

Notes

Using a lid for the first half of cooking helps melt the cheese without burning the bread.
