- Pat chicken dry and season generously with salt and pepper.
- Sear chicken skin-side down in hot butter/oil in a large skillet for 6-8 minutes until crispy. Flip and cook 2 mins. Remove chicken.
- Discard most fat. Add remaining butter, sliced apples, and shallots to skillet. Sauté 5-7 minutes until golden. Add garlic for 1 minute.
- Optional: Deglaze with brandy, scraping up browned bits.
- Add hard cider, broth, thyme, and mustard. Bring to simmer.
- Return chicken to skillet, skin-side up. Cover and simmer on low for 15-20 minutes until cooked through (165°F).
- Remove chicken again. Simmer sauce to reduce slightly. Stir in heavy cream and heat gently.
- Return chicken to the sauce, garnish with fresh thyme, and serve from the skillet.
Notes
Serve with mashed potatoes or crusty bread.
