Chicken Pesto Sandwich

A crispy toasted ciabatta sandwich filled with juicy grilled chicken, melted mozzarella, fresh tomato slices, and rich basil pesto.

Ingredients
  

Sandwich Components
  • 4 large ciabatta rolls or 8 slices hearty artisan bread
  • 2 large boneless, skinless chicken breasts about 1 lb total
  • 0.5 cup basil pesto prepared
  • 8 oz fresh mozzarella cheese sliced thick
  • 2 medium ripe tomatoes thinly sliced
  • 3 tbsp olive oil for brushing bread
Chicken Seasoning
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp dried Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

  • Cutting board
  • Chef's knife
  • Small mixing bowl

Method
 

  1. Slice chicken breasts horizontally into thinner cutlets or pound to 1/2-inch thickness. Mix 1 tbsp olive oil, garlic powder, Italian seasoning, salt, and pepper together and rub over the chicken.
  2. Heat a skillet over medium-high heat. Cook chicken for 4-6 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice into strips.
  3. Slice ciabatta rolls in half. Brush the outer crusts of top and bottom halves liberally with the 3 tbsp of olive oil.
  4. Spread pesto generously on the inside cut surfaces of all bread halves. On bottom halves, layer mozzarella, sliced chicken, tomatoes (seasoned with a pinch of salt), and another layer of mozzarella. Top with the other bread half.
  5. Heat a skillet or panini press over medium heat. Cook sandwiches, pressing down with a weight if using a skillet, for 4-5 minutes per side until golden brown and cheese is fully melted.
  6. Remove from heat, let cool for 1 minute, slice in half diagonally and serve hot.

Notes

Pat tomato slices dry with a paper towel before assembling to prevent sogginess. Use room temperature cheese for faster melting.
