- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Place the cubed chicken and sweet potatoes on the baking sheet. Drizzle with olive oil and sprinkle with paprika, garlic powder, cumin, salt, and pepper. Toss to coat evenly.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until chicken is cooked and potatoes are tender and browned.
- While the chicken roasts, rinse the rice. Combine rice and water/broth in a pot. Bring to a boil, cover, reduce heat to low, and simmer for 15-18 minutes until water is absorbed.
- Prepare the sauce by whisking together tahini (or yogurt), lemon juice, maple syrup, minced garlic, and enough warm water to reach a drizzling consistency.
- To assemble, divide the rice into bowls. Top with roasted chicken and sweet potatoes.
- Generously drizzle the creamy sauce over the bowls and garnish with fresh chopped parsley before serving.
