- Mix peanut butter, 3/4 cup powdered sugar, 1 tbsp butter, and 1/2 tsp vanilla in a bowl until firm.
- Roll filling into 24 small balls and freeze them while preparing the dough.
- Beat cocoa powder, granulated sugar, and oil in a large bowl. Add eggs one at a time, then vanilla.
- Whisk flour, baking powder, and salt together, then gradually mix into the wet ingredients.
- Cover and chill the chocolate dough for at least 4 hours.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Wrap 1 tbsp of chocolate dough around each frozen peanut butter ball, sealing completely.
- Roll dough balls generously in powdered sugar and place on baking sheet.
- Bake 10-12 minutes until cracked but soft. Cool on rack.
Notes
Ensure peanut butter balls are frozen solid to prevent melting during baking. Store in an airtight container.
