- Grease a 9x9-inch baking dish. Arrange the bottom halves of the sliced croissants in an even layer in the dish.
- Sprinkle half of the chocolate chips and chunks evenly over the croissant bottoms. Cover with the top halves of the croissants.
- In a large bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, and salt until smooth.
- Pour the custard mixture evenly over the croissants. Press down gently on the pastries so they absorb the liquid. Let sit at room temperature for 30 minutes (or refrigerate overnight).
- Preheat oven to 350°F (175°C). Sprinkle the remaining chocolate chips and chunks over the top of the soaked croissants.
- Bake for 40-45 minutes until the custard is set in the center and the tops of the croissants are golden brown. (Tent with foil after 25 minutes if browning too quickly).
- Let cool for 10 minutes before slicing and serving warm.

Make Ahead: Assemble the dish up to the baking step, cover tightly, and refrigerate overnight. Add the final layer of chocolate just before baking the next morning.
