Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened to room temperature
  • 0.5 cup confectioners' sugar powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp orange zest freshly grated (approx 2 oranges)
  • 2 cups all-purpose flour spooned and leveled
  • 0.25 tsp salt
Chocolate Dip
  • 6 oz dark chocolate chopped, or high quality chips
  • 1 tsp coconut oil or shortening, for gloss
  • 1 tbsp orange zest for garnish

Method
 

  1. In a large bowl, cream together softened butter, confectioners' sugar, and 2 tablespoons orange zest until smooth and creamy (about 2-3 minutes).
  2. Mix in the vanilla extract.
  3. Whisk together flour and salt in a separate bowl. Gradually add to the butter mixture, mixing on low speed just until combined and a dough forms.
  4. Shape dough into a log approximately 2 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 2 hours until firm.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Slice the chilled log into 1/4 to 1/2 inch thick rounds. Place on baking sheets 1 inch apart.
  7. Bake for 10-12 minutes until edges are barely golden. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
  8. Melt chocolate and coconut oil in 30-second intervals in the microwave, stirring until smooth.
  9. Dip half of each cooled cookie into chocolate, letting excess drip off. Place on parchment paper and sprinkle with remaining orange zest. Let set before serving.

Notes

Ensure the dough is thoroughly chilled before slicing to prevent the cookies from spreading and losing their round shape.
