Ingredients
  

For the Chocolate Cookie Dough
  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder Dutch-processed recommended
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Mint Truffle Filling
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 0.5 tsp peppermint extract or to taste
  • 2-3 drops green food coloring optional
For the Icing & Decoration
  • 1.5 cups powdered sugar
  • 2-3 tbsp milk or heavy cream
  • 0.5 tsp vanilla extract
  • As needed festive green, white, and red nonpareil sprinkles

Equipment

Method
 

  1. Make Truffles: Beat softened cream cheese, powdered sugar, peppermint extract, and food coloring until smooth. Chill 30 mins, then roll into small balls and freeze 15-20 mins until firm.
  2. Make Cookie Dough: Whisk flour, cocoa, baking soda, salt. Beat softened butter and granulated sugar until fluffy. Beat in egg and vanilla. Gradually mix in dry ingredients.
  3. Encase Truffles: Flatten 1 tbsp cookie dough, place a frozen truffle ball in center, and seal to form a smooth ball.
  4. Bake: Place on parchment-lined sheet, bake 9-11 mins at 350°F (175°C). Cool on rack.
  5. Ice & Decorate: Whisk powdered sugar, milk, vanilla for icing until thick. Dip cooled cookies, let excess drip, then immediately coat with festive sprinkles. Let set.

Notes

Ensure cream cheese and butter are room temperature. Freeze truffle balls well for easy handling. Do not overbake cookies. Use green food coloring for a vibrant mint center.
