Ingredients
  

Chocolate Cookie Base
  • 1 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder Dutch process recommended
  • 1 tsp baking soda
  • 0.5 tsp salt
Peanut Butter Swirl
  • 0.5 cup creamy peanut butter
  • 2 Tbsp powdered sugar
  • 1 Tbsp milk or cream

  • Parchment paper
  • Large mixing bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. In a small bowl, whisk peanut butter, powdered sugar, and milk until smooth for the swirl. Set aside.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar. Whisk in eggs and vanilla.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet, mixing until just combined. Do not overmix.
  4. Scoop dough balls onto prepared baking sheets. Dollop a small spoonful of the peanut butter swirl mixture onto the top of each cookie ball. Gently swirl with a toothpick.
  5. Bake for 9-11 minutes. Cookies should look slightly under-baked in the center. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For the chewiest cookie, use room temperature eggs and avoid overmixing the dough. Do not skip the cooling time on the sheet.
