Chocolate Raspberry Chia Cups

Decadent dark chocolate cups filled with a healthy, homemade raspberry chia seed jam. A Vegan, Gluten-Free, and Refined Sugar-Free treat.

Ingredients
  

Chocolate Shell
  • 1.5 cups dark chocolate chips dairy-free/vegan
  • 1 tbsp coconut oil
Raspberry Filling
  • 1 cup raspberries fresh or frozen
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup adjust to taste
  • 0.5 tsp vanilla extract

Equipment

  • Mini muffin tin
  • Paper or silicone liners
  • Small saucepan
  • Microwave-safe bowl

Method
 

  1. Heat raspberries in a saucepan over medium heat, mashing with a fork until broken down (2-3 mins).
  2. Remove from heat. Stir in chia seeds, maple syrup, and vanilla. Let sit for 15-20 minutes to thicken into jam.
  3. Melt dark chocolate and coconut oil in 30-second intervals in the microwave until smooth.
  4. Line a mini muffin tin with liners. Pour 1-2 tsp of chocolate into the bottom of each liner. Freeze for 10 minutes.
  5. Place a teaspoon of raspberry jam into the center of each frozen chocolate base, leaving a small border.
  6. Pour remaining melted chocolate over the top to cover the jam completely.
  7. Freeze for 20-30 minutes until set. Store in the fridge.

Notes

Ensure the jam does not touch the sides of the liner to prevent leaking.
