  • 2-3 medium Apples Fuji, Gala, or Honeycrisp
  • 8-10 Wooden Popsicle Sticks
For the Coating
  • 1 cup Semi-Sweet Chocolate Chips Or dark chocolate
  • 1 tbsp Coconut Oil or Shortening
  • 10-12 individual Caramel Candies Soft, chewy type
  • 1 tbsp Heavy Cream or Milk For caramel
Topping
  • 0.5 cup Pecans Chopped, toasted (optional)

Equipment

  • Parchment paper
  • Microwave-safe bowls
  • Wooden popsicle sticks

Method
 

  1. Slice apples into 1/4-1/2 inch thick rounds. Insert a popsicle stick into each. Place on parchment-lined baking sheet and freeze for 10-15 minutes.
  2. Melt chocolate chips and coconut oil in microwave until smooth and glossy (thick, viscous consistency).
  3. Dip chilled apple slices into melted chocolate, letting excess drip off. Return to parchment-lined baking sheet.
  4. Melt caramel candies and heavy cream/milk in microwave until smooth and gooey (thick, pourable consistency).
  5. Drizzle the gooey, thick caramel over the chocolate-coated apple slices.
  6. Immediately sprinkle chopped pecans over the caramel before it sets.
  7. Refrigerate for at least 30 minutes, or until chocolate and caramel are completely firm.
  8. Serve chilled for a firm set, or at room temperature for a softer, gooier caramel.

Notes

Thoroughly dry apples before coating to ensure chocolate adheres properly. Chilling apples helps chocolate set faster. For best gooey caramel, let sit at room temp for a few minutes before serving. Setting time is 30 minutes.
