Ingredients
  

For the Base Mix (Aperol Base)
  • 1.5 cups Aperol
  • 1.5 cups Cranberry Juice Cocktail
  • 0.75 cup Vodka optional
  • 0.5 cup Simple Syrup adjust to taste
For Serving
  • 3 bottles Prosecco chilled (750ml each)
  • 2 cups Club Soda chilled
  • As needed fresh cranberries for garnish
  • As needed rosemary sprigs for garnish

  • Large pitcher or punch bowl
  • Stirring spoon

Method
 

  1. Combine Base: In a large pitcher, mix Aperol, Cranberry Juice, Vodka (if using), and Simple Syrup. Stir well.
  2. Chill: Cover and refrigerate the base mix for at least 2 hours to chill thoroughly.
  3. Add Sparkle: Just before serving, place ice in the punch bowl. Pour in the chilled Prosecco and Club Soda. Stir gently to combine.
  4. Garnish & Serve: Float fresh cranberries and rosemary sprigs on top. Serve immediately in wide-bowled glasses.

Notes

Do not add the Prosecco or Club Soda until just before serving to maintain fizz. Use a large ice block instead of small cubes to prevent dilution.
