Ingredients
  

Flaky Crust
  • 1.25 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 1 tbsp granulated sugar
  • 0.5 tsp salt
  • 3-5 tbsp ice water
Custard Filling
  • 1.5 cups whole milk
  • 0.5 cup heavy whipping cream
  • 4 eggs large, room temperature
  • 0.75 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg

Method
 

  1. Mix flour, sugar, and salt. Cut in cold butter until crumbly. Add ice water until dough forms. Chill 1 hour.
  2. Roll out dough and fit into 9-inch pie plate. Crimp edges and chill again for 15 minutes.
  3. Preheat oven to 400°F (200°C). Blind bake crust with weights for 15 mins, remove weights, bake 5 mins more. Lower oven to 350°F.
  4. Heat milk and cream in saucepan with cinnamon and vanilla until steaming. Do not boil.
  5. Whisk eggs and sugar in a bowl. Slowly pour warm milk mixture into eggs while whisking constantly to temper.
  6. Pour custard into crust. Bake 35-45 mins until edges set but center jiggles slightly.
  7. Cool completely on wire rack (3-4 hours) to allow filling to set before slicing.

Ensure ingredients for custard are room temperature before mixing for smoothest texture.
