Ingredients

Cocktail
  • 2 oz Blanco Tequila
  • 1 oz fresh lime juice
  • 1.5 oz cranberry juice 100% juice for color
  • 0.75 oz Rosemary Simple Syrup thick, viscous syrup for body
  • ice
Garnish
  • granulated sugar for the rim
  • fresh cranberries and rosemary sprigs

Equipment

  • Cocktail shaker
  • Small saucepan
  • Stemless wine glass or margarita glass

Method

  1. Prepare Rosemary Simple Syrup (ahead of time): Combine 1 cup water, 2 cups sugar, and 3-4 rosemary sprigs in a small saucepan. Heat until sugar dissolves, creating a thick, viscous syrup.
  2. Remove from heat and let infuse for 30 minutes. Strain out rosemary and chill syrup.
  3. Moisten the rim of a glass with lime juice and press into granulated sugar to create a frosted edge.
  4. In a cocktail shaker, combine tequila, lime juice, cranberry juice, and 3/4 oz chilled Rosemary Simple Syrup.
  5. Add ice and shake vigorously until the shaker is frosted.
  6. Fill the prepared glass with fresh ice. Strain the mixture into the glass. The liquid will be a heavy, viscous red.
  7. Garnish with fresh cranberries and a sprig of rosemary.

Notes

Use a 2:1 sugar-to-water ratio for the simple syrup to achieve the thick, gooey, viscous texture needed for a luxurious mouthfeel. The syrup can be made up to 3 weeks ahead.
