Method
- Prepare Rosemary Simple Syrup (ahead of time): Combine 1 cup water, 2 cups sugar, and 3-4 rosemary sprigs in a small saucepan. Heat until sugar dissolves, creating a thick, viscous syrup.
- Remove from heat and let infuse for 30 minutes. Strain out rosemary and chill syrup.
- Moisten the rim of a glass with lime juice and press into granulated sugar to create a frosted edge.
- In a cocktail shaker, combine tequila, lime juice, cranberry juice, and 3/4 oz chilled Rosemary Simple Syrup.
- Add ice and shake vigorously until the shaker is frosted.
- Fill the prepared glass with fresh ice. Strain the mixture into the glass. The liquid will be a heavy, viscous red.
- Garnish with fresh cranberries and a sprig of rosemary.
Notes
Use a 2:1 sugar-to-water ratio for the simple syrup to achieve the thick, gooey, viscous texture needed for a luxurious mouthfeel. The syrup can be made up to 3 weeks ahead.
