Ingredients
  

The Crust
  • 1 crust pie crust 9-inch deep dish, unbaked
The Filling
  • 6 slices bacon cooked and chopped
  • 2 cups spinach fresh, chopped
  • 0.5 cup red bell pepper diced
  • 0.25 cup onion diced
  • 1.5 cups Gruyere cheese shredded
The Custard
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 pinch nutmeg

Method
 

  1. Preheat oven to 375°F (190°C). Blind bake the pie crust with weights for 15 mins, then 5 mins without weights.
  2. Fry bacon until crispy. Remove. Sauté onion and peppers in bacon fat until soft. Add spinach to wilt.
  3. Whisk eggs, cream, milk, salt, pepper, and nutmeg in a bowl.
  4. Layer bacon, veggies, and cheese into the crust. Pour egg mixture over top.
  5. Lower oven to 350°F (175°C). Bake quiche for 35-45 minutes until center is just set.
  6. Let cool for 15 minutes before slicing.

Notes

Blind baking is crucial to prevent a soggy crust. Serve warm or at room temperature.
