Ingredients
  

For the Sugar Cookie Crust
  • 2 cups Sugar Cookies crushed
  • 0.5 cup Unsalted Butter melted
For the Cheesecake Filling
  • 3 8-ounce packages Cream Cheese softened, full-fat
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 1 tsp Vanilla Extract
  • 0.25 tsp Salt
  • 0.5 cup Red and Green Christmas Sprinkles
  • 0.5 cup Mini Chocolate Chips

Equipment

  • 9-inch springform pan
  • Large mixing bowls
  • Hand mixer or stand mixer
  • Wire rack

Method
 

  1. Preheat oven to 325°F (160°C).
  2. Combine crushed sugar cookies and melted butter; press into a 9-inch springform pan. Bake 8-10 minutes. Cool.
  3. Beat softened cream cheese and sugar until creamy. Beat in eggs one at a time, then vanilla and salt.
  4. Gently fold in Christmas sprinkles and mini chocolate chips.
  5. Pour filling over cooled crust. Bake 50-60 minutes until edges are set with a slight wobble in the center.
  6. Turn off oven, prop door open, and cool in oven for 1 hour. Remove and cool completely on wire rack.
  7. Cover and refrigerate for at least 4 hours, or preferably overnight, to chill thoroughly.
  8. Remove from pan, garnish as desired, slice, and serve chilled.

Notes

Ensure cream cheese is well softened for a smooth filling. Do not overmix the eggs. Gradual cooling helps prevent cracks. For best results, chill overnight.
