Ingredients

For the Mimosa Base
  • 0.5 cup cinnamon simple syrup chilled (see notes for quick recipe)
  • 2 cups cranberry juice 100% juice, chilled
  • 2 cups apple cider or apple juice, chilled
  • 1 bottle sparkling wine 750ml, Brut Prosecco or Cava, chilled
For Garnish (Per Drink)
  • 1-2 slices red apple
  • 8-10 fresh or frozen cranberries
  • 1 cinnamon stick

Equipment

  • Pitcher or punch bowl
  • Saucepan (for simple syrup)
  • Champagne flutes or rocks glasses

Method

  1. Make Cinnamon Syrup (Optional): Combine equal parts water and sugar with 2 cinnamon sticks in a saucepan. Simmer until sugar dissolves. Let steep 30 minutes, strain, and chill completely.
  2. Make the Base: In a large pitcher, combine the chilled cranberry juice, apple cider, and cinnamon simple syrup. Stir gently.
  3. Chill: Cover and refrigerate the mimosa base for at least 1 hour to ensure it is very cold.
  4. Assemble & Serve (Just before serving): Pour the chilled mimosa base into each glass (1/3 to 1/2 full). Gently top with the chilled sparkling wine.
  5. Garnish: Garnish each drink with apple slices, fresh or frozen cranberries, and a cinnamon stick. Serve immediately.

Notes

For a non-alcoholic punch, substitute the sparkling wine with sparkling apple cider or ginger ale. For an added festive touch, rim the glasses with cinnamon sugar.
