Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp instant coffee granules or espresso powder
  • 1.5 tsp ground cinnamon
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cup unsalted butter softened
  • 0.75 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
Coating
  • 0.5 cup powdered sugar for rolling

Equipment

  • Stand mixer or hand mixer
  • Baking sheet
  • Parchment paper
  • Wire rack

Method
 

  1. Whisk flour, instant coffee, cinnamon, baking powder, baking soda, and salt in a medium bowl.
  2. Cream butter, brown sugar, and granulated sugar together until fluffy (2-3 mins). Beat in egg and vanilla.
  3. Gradually mix in dry ingredients until combined. Cover and chill dough for at least 1 hour.
  4. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  5. Roll dough into 1.5-inch balls, then roll generously in powdered sugar until thick white coating forms.
  6. Bake for 10-12 minutes until puffed and cracked. Cool on pan for 5 minutes, then move to wire rack.

Notes

For extra crunch, roll in granulated sugar before rolling in powdered sugar.
