Ingredients
  

Vegetables
  • 2 lbs parsnips peeled and cut into sticks
  • 3 tbsp olive oil
Glaze & Seasoning
  • 3 tbsp maple syrup pure
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel parsnips and cut them into uniform sticks (batons).
  3. In a large bowl, toss parsnips with olive oil, maple syrup, cinnamon, salt, and pepper.
  4. Spread parsnips in a single layer on the baking sheet.
  5. Roast for 25-35 minutes, tossing halfway through, until tender and caramelized.
  6. Transfer to a serving dish and garnish with fresh parsley.

Notes

Cut parsnips evenly to ensure they roast at the same rate. Remove woody cores from very large parsnips.
