- Combine strawberries, 1/3 cup sugar, and lemon juice in a bowl. Let sit for 30 minutes to macerate.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk flour, 1/4 cup sugar, baking powder, and salt in a large bowl.
- Cut cold butter into the flour mixture until it resembles coarse crumbs.
- Stir in heavy cream and vanilla just until a dough forms. Do not overmix.
- Drop mounds of dough onto the baking sheet or cut into rounds.
- Bake for 15-18 minutes until golden brown. Cool on a wire rack.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Split biscuits, fill with whipped cream, and top generously with strawberries.
Notes
Ensure butter and cream are very cold for the flakiest biscuits. Serve immediately after assembling.
