A viral high-protein dinner hack! Crispy baked chicken chunks served in a creamy, blended cottage cheese marinara sauce, topped with melted mozzarella.

Ingredients
  

Chicken
  • 1 lb chicken breast cubed
  • 0.5 cup panko breadcrumbs or Italian crumbs
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
High Protein Sauce
  • 1 cup low-fat cottage cheese
  • 0.5 cup marinara sauce no sugar added preferred
  • 1 tbsp parmesan cheese grated
Toppings
  • 0.5 cup mozzarella cheese shredded
  • 1 tsp fresh parsley chopped, for garnish

Equipment

  • Baking Dish (8x8 or similar)
  • Blender
  • Knife
  • Cutting board

Method
 

  1. Preheat oven to 400°F (200°C). Spray a baking dish with non-stick spray.
  2. Cut chicken breast into 1-inch cubes. Toss in a bowl with olive oil, Italian seasoning, garlic powder, salt, and breadcrumbs until coated.
  3. Optional Step: Air fry chicken at 380°F for 8 minutes to pre-crisp. Alternatively, proceed to baking.
  4. In a blender, combine cottage cheese, marinara sauce, and parmesan. Blend on high until completely smooth and creamy.
  5. Pour the blended sauce into the bottom of the baking dish.
  6. Arranged the chicken pieces on top of the sauce (do not fully submerge them to keep them crispy).
  7. Top generously with shredded mozzarella cheese.
  8. Bake for 20-25 minutes (or 10-15 if chicken was air-fried) until cheese is bubbly and golden. Broil for 1-2 minutes for extra color.

Notes

Serve with pasta, zucchini noodles, or enjoy on its own for a low-carb option.
