Cranberry and Brie Crostini

Ingredients
  

Crostini Base
  • 1 baguette sliced into 12-15 rounds
  • 2 tbsp olive oil
  • 1 pinch salt and pepper
Toppings
  • 8 oz brie cheese sliced into small pieces
  • 1 cup cranberry sauce whole berry, store-bought or homemade
  • 1 tbsp fresh thyme leaves for garnish
  • 1 tbsp honey optional, for drizzling

Equipment

  • Baking sheet
  • Serrated Bread Knife
  • Cutting board
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange baguette slices on the baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper.
  3. Bake for 5-7 minutes, flipping halfway, until lightly golden and toasted.
  4. Remove from oven. Place a slice of brie on each toasted bread piece.
  5. Return to the oven and bake for another 3-5 minutes until the brie is melted.
  6. Top each crostini with a spoonful of cranberry sauce and garnish with fresh thyme leaves.
  7. Drizzle with honey if desired and serve warm.

Notes

For easy slicing, place the brie in the freezer for 15 minutes before cutting.
