Ingredients
  

For the Brie Bites
  • 1 sheet frozen puff pastry thawed
  • 1 wheel Brie cheese 8 oz, rind on, cut into ~24 small cubes
  • 0.5 cup cranberry sauce or jam must be thick/viscous consistency
For Garnish (Optional)
  • small sprigs fresh rosemary or thyme
  • small pinch chopped pecans or walnuts

  • Mini muffin tin (24 cups)
  • Rolling pin (optional)
  • Sharp knife or pizza cutter

Method
 

  1. Preheat oven to 400°F (200°C). Lightly spray a mini muffin tin. Cut puff pastry sheet into 24 small, even squares.
  2. Gently press one pastry square into each cup of the muffin tin to form a small cup.
  3. Place one cube of Brie cheese into the bottom of each pastry cup.
  4. Top the Brie with approximately one teaspoon of thick cranberry sauce or jam.
  5. Bake for 12-15 minutes until pastry is golden brown and cheese is completely melted and gooey.
  6. Remove from oven and let cool in the tin for 5-10 minutes to allow the Brie's creamy, viscous core to set slightly.
  7. Carefully remove bites and arrange on a platter. Garnish each with a tiny sprig of fresh rosemary. Serve warm.

Notes

Ensure the puff pastry remains cold until assembly. Use a thick cranberry sauce consistency to prevent it from soaking the pastry. The resting time is crucial for easy removal and serving.
