Ingredients
  

Pastry & Filling
  • 2 sheets puff pastry thawed
  • 8 oz brie cheese chilled and cubed
  • 0.5 cup cranberry sauce whole berry
  • 0.5 cup pecans chopped
Topping
  • 1 egg large
  • 1 tbsp water for egg wash
  • 12 pecan halves whole
  • 1 tbsp coarse sugar or sea salt

  • Parchment paper

  • Round cookie cutter

Method
 

  1. Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. Roll out thawed puff pastry slightly and cut into rounds using a cookie cutter.
  3. Place half the rounds on the baking sheet. Top each with a cube of brie, a teaspoon of cranberry sauce, and chopped pecans.
  4. Top with the remaining pastry rounds. Use a fork to crimp and seal the edges tightly.
  5. Whisk egg with water and brush the top of each puff. Place a whole pecan half on top.
  6. Sprinkle with coarse sugar or salt.
  7. Bake for 18-22 minutes until puffed and deep golden brown.
  8. Let cool for 5-10 minutes before serving to allow the cheese to set slightly.

Notes

Keep your puff pastry cold until it hits the oven for the best rise. If using frozen cranberry sauce, thaw slightly before using.
