Cranberry Brie Walnut Flatbread

Ingredients
  

Flatbread Base
  • 1 package pre-made flatbread 8-10 oz, such as naan or pizza crust
  • 1 tbsp olive oil
Toppings
  • 1 wheel Brie cheese 8 oz, rind removed, cut into pieces
  • 0.5 cup dried cranberries
  • 0.5 cup walnut halves or pieces lightly toasted
  • 1 tbsp fresh thyme leaves chopped, plus extra for garnish
  • 1 tbsp honey or maple syrup optional, for drizzling
  • Freshly ground black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet or line with parchment paper. Brush flatbreads with olive oil.
  2. Spread walnuts on a dry baking sheet and toast in the oven for 5-7 minutes until fragrant; let cool and chop if desired.
  3. Remove rind from Brie and cut into small pieces or thin slices.
  4. Distribute Brie pieces, dried cranberries, and toasted walnuts evenly over the flatbreads.
  5. Bake for 10-15 minutes, or until the flatbread is golden brown and crispy, and the Brie is melted and bubbly.
  6. Remove from oven, sprinkle with fresh thyme, and optionally drizzle with honey or maple syrup and black pepper. Slice and serve warm.

Notes

For an extra layer of flavor, add thinly sliced caramelized onions under the Brie. Serve immediately for best results when Brie is hot and gooey.
