Ingredients
  

  • 1 sheet frozen puff pastry thawed (10-12 oz / 280-340g)
  • 1 wheel Camembert cheese 8 oz / 225g, cut into 1/2-inch cubes
  • 0.5 cup fresh or frozen cranberries do not thaw
  • 0.25 cup shelled pistachios roughly chopped
  • 2 tbsp honey or maple syrup
  • 1 large egg beaten, for egg wash
  • Small star-shaped cookie cutter optional, for topping

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Unroll thawed puff pastry onto a lightly floured surface.
  2. Cut pastry into three lengthwise strips. Cut each strip into varying width rectangles to create 3-4 decreasing sizes per tree (e.g., 2 large, 2 medium, 2 small, 2 tiny).
  3. On the baking sheet, stack rectangles from largest to smallest to form a tree. Between each layer, add Camembert cubes, cranberries, and pistachios, leaving a small border.
  4. If using, cut small stars from pastry scraps and place one on top of each tree.
  5. Gently brush each tree with beaten egg wash and drizzle with honey/maple syrup.
  6. Bake for 15-20 minutes, or until pastry is puffed, golden brown, and cheese is bubbly.
  7. Cool slightly on the baking sheet before carefully transferring to a serving platter. Serve warm or at room temperature.

Notes

Work quickly with puff pastry to keep it cold. Don't overfill the layers as cheese will melt. Trees can be assembled and refrigerated for a few hours before baking.
