Ingredients
  

Graham Cracker Crust
  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 0.33 cup granulated sugar
  • 1 pinch salt
Cheesecake Filling
  • 16 oz cream cheese full-fat, completely softened
  • 0.75 cup granulated sugar
  • 2 large eggs room temperature
  • 0.5 cup sour cream room temperature
  • 1 tsp vanilla extract
Cranberry Topping
  • 12 oz fresh or frozen cranberries
  • 0.75 cup granulated sugar
  • 0.5 cup water or orange juice
  • 1 tbsp cornstarch mixed with 1 tbsp cold water
  • 1 tsp orange zest optional

  • Hand mixer or stand mixer
  • Medium saucepan

Method
 

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, sugar, and salt. Press into a 9-inch pie dish.
  2. Bake crust for 8-10 minutes. Let cool while preparing filling.
  3. Beat softened cream cheese and sugar until smooth. Mix in sour cream and vanilla.
  4. Gently beat in eggs one at a time on low speed until just combined. Do not overmix.
  5. Pour filling into crust. Bake at 350°F for 35-45 minutes until center is slightly wobbly but edges are set.
  6. Turn off oven, crack door open, and let cool in oven for 1 hour. Then cool completely at room temp and chill in fridge for 4+ hours.
  7. For topping: Simmer cranberries, sugar, and juice/water for 5-8 minutes until berries pop.
  8. Stir in cornstarch slurry and zest. Cook 1-2 mins until thickened. Cool topping completely to room temperature.
  9. Spoon cooled topping over chilled cheesecake pie before serving.

Notes

Total time includes chilling time. Must be made at least 8 hours ahead of serving. Ensure all filling ingredients are room temperature.
