  • 1 package puff pastry sheets 2 sheets, thawed
  • 8 oz cream cheese softened
  • 0.5 cup feta cheese crumbled
  • 0.5 cup dried cranberries chopped (or whole berry sauce)
  • 1 tbsp fresh rosemary or thyme finely chopped
  • 1 tbsp honey optional
  • 0.5 tsp black pepper

  • 1 large egg beaten with 1 tbsp water for wash

Method
 

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a bowl, beat softened cream cheese until smooth. Fold in feta, cranberries, herbs, honey, and pepper.
  3. Lightly flour a surface. Unfold one puff pastry sheet and roll slightly to smooth seams.
  4. Spread half the cream cheese mixture over the sheet, leaving a 1/2-inch border on one long edge.
  5. Tightly roll up the pastry toward the clean border. Dab water on the border to seal the seam. Repeat with second sheet.
  6. Wrap logs in plastic wrap and refrigerate for at least 45 minutes to firm up.
  7. Slice chilled logs into 1/2-inch thick rounds using a sharp serrated knife.
  8. Place rounds on prepared baking sheets spaced apart. Brush tops with egg wash.
  9. Bake for 18-22 minutes until puffed and deeply golden brown. Cool slightly before serving.

Notes

Chilling the rolled logs is essential for clean slicing. Logs can be made ahead and frozen for up to a month before slicing and baking.
