Cranberry Orange Glazed Chicken

Juicy chicken thighs seared and simmered in a sticky, sweet, and tart glaze made from fresh cranberries, orange juice, and honey.

Ingredients
  

Chicken
  • 4-6 chicken thighs bone-in, skin-on
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Glaze
  • 12 oz fresh cranberries or frozen
  • 0.75 cup orange juice freshly squeezed
  • 0.5 cup honey or brown sugar
  • 2 tbsp soy sauce low sodium
  • 1 tbsp orange zest
  • 2 cloves garlic minced
  • 1 sprig fresh rosemary optional

Method
 

  1. Pat chicken thighs dry and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 6-8 minutes until crispy. Flip and sear 2 mins. Remove chicken.
  3. In the same pan, sauté garlic for 30 seconds. Add cranberries, orange juice, honey, soy sauce, and rosemary.
  4. Simmer for 5-7 minutes until cranberries burst and sauce begins to thicken.
  5. Return chicken to the pan. Cover and simmer for 10-15 minutes until chicken is cooked through (165°F).
  6. Garnish with orange zest and serve hot with the thick glaze spooned over top.

Notes

If the sauce becomes too thick, add a tablespoon of water or chicken broth to loosen it. Serve over rice or mashed potatoes.
