Method
- Pat chicken thighs dry and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 6-8 minutes until crispy. Flip and sear 2 mins. Remove chicken.
- In the same pan, sauté garlic for 30 seconds. Add cranberries, orange juice, honey, soy sauce, and rosemary.
- Simmer for 5-7 minutes until cranberries burst and sauce begins to thicken.
- Return chicken to the pan. Cover and simmer for 10-15 minutes until chicken is cooked through (165°F).
- Garnish with orange zest and serve hot with the thick glaze spooned over top.
Notes
If the sauce becomes too thick, add a tablespoon of water or chicken broth to loosen it. Serve over rice or mashed potatoes.
