Ingredients
  

Pasta Base
  • 16 oz elbow macaroni uncooked
  • 10 oz fresh spinach or frozen/thawed
  • 1 onion diced
  • 3 cloves garlic minced
Cheese Sauce
  • 5 tbsp unsalted butter divided
  • 0.25 cup all-purpose flour
  • 3 cups whole milk warm
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 3 cups white cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 0.25 tsp nutmeg

Equipment

Method
 

  1. Preheat oven to 375°F (190°C). Grease a large baking dish.
  2. Boil macaroni in salted water until al dente. Drain.
  3. Sauté onion and garlic in 1 tbsp butter. Add spinach and cook until wilted. Set aside.
  4. In a pot, melt remaining 4 tbsp butter. Whisk in flour and cook for 1 minute.
  5. Slowly whisk in warm milk and cream until smooth and thickened.
  6. Stir in cream cheese until melted. Remove from heat and stir in cheddar and mozzarella.
  7. Combine pasta, spinach mixture, and cheese sauce. Pour into baking dish.
  8. Top with parmesan cheese and bake 20-25 minutes until golden.

Notes

Ensure spinach is squeezed dry to prevent watery sauce.
