Ingredients
  

The Bake
  • 1.5 cups orzo pasta uncooked
  • 1 package (5.2oz) Boursin cheese Garlic & Fine Herbs
  • 3 cups chicken broth hot
  • 1 medium zucchini diced
  • 1 large bell pepper orange or red, diced
  • 0.5 cup onion diced
  • 2 cloves garlic minced
The Chicken
  • 1 lb chicken breast boneless skinless
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 pinch salt and pepper
Garnish
  • 0.25 cup fresh basil chopped
  • 2 tbsp Parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with olive oil, Italian seasoning, salt, and pepper. Sear in a skillet for 3-4 minutes per side until golden (finish cooking in oven later if needed). Slice and set aside.
  3. In a 9x13 baking dish, mix dry orzo, diced zucchini, bell pepper, onion, and garlic.
  4. Pour hot chicken broth over the mixture. Place the unwrapped Boursin cheese wheel in the center.
  5. Cover tightly with foil and bake for 20 minutes.
  6. Remove foil. Stir vigorously to melt the cheese and create a creamy sauce.
  7. Top with sliced chicken. If chicken needs more cooking, bake uncovered for 5-10 mins. Otherwise, garnish with basil and Parmesan and serve.

Notes

Using boiling broth helps the orzo cook evenly. Add a splash of water if the sauce becomes too thick upon standing.
