Sauce Ingredients
  • 1 bunch fresh cilantro stems and leaves, washed roughly chopped
  • 3 cloves garlic peeled
  • 0.5 cup sour cream full fat recommended
  • 0.25 cup mayonnaise
  • 2 tbsp fresh lime juice from 1-2 limes
  • 0.25 tsp salt plus more to taste
  • 0.125 tsp black pepper optional

Method
 

  1. Wash the cilantro thoroughly and shake off excess water. Roughly chop the stems and leaves. Peel the garlic cloves.
  2. Place the chopped cilantro, peeled garlic cloves, sour cream, mayonnaise, fresh lime juice, salt, and pepper into a blender or food processor.
  3. Pulse a few times to combine, then blend on high speed until the sauce is completely smooth and creamy, scraping down the sides as needed. The cilantro should be in tiny flecks.
  4. Taste the sauce and add more salt or lime juice if desired. Pulse briefly to incorporate.
  5. Pour into a jar or bowl. For best flavor, refrigerate for at least 15 minutes before serving to let flavors meld. Store covered in the fridge for up to one week.

Notes

For a spicier sauce, add half a jalapeƱo pepper (seeded) to the blender. For a lighter version, use Greek yogurt instead of sour cream.
