Sauce Ingredients
  • 1 cup fresh cilantro loosely packed, tender stems okay
  • 0.5 cup mayonnaise full fat preferred
  • 0.5 cup sour cream or Greek yogurt
  • 2 tbsp fresh lime juice about 1 lime
  • 2 cloves garlic peeled
  • 0.5 tsp kosher salt to taste
  • 1 pinch black pepper
  • 1 jalapeƱo optional, seeded for less heat

Method
 

  1. Wash and thoroughly dry the cilantro. Roughly chop it so it fits easily into the blender.
  2. Add the cilantro, mayonnaise, sour cream (or Greek yogurt), fresh lime juice, peeled garlic cloves, salt, and pepper to a blender or food processor.
  3. Blend on high for 45-60 seconds until the mixture is smooth, creamy, and pale green, with the cilantro and garlic fully incorporated.
  4. Taste the sauce and adjust seasoning if necessary, adding more salt or lime juice if needed.
  5. Transfer to a jar and refrigerate for at least 30 minutes before serving to let flavors meld. Store refrigerated for up to 5 days.

Notes

For a dairy-free version, substitute the mayo and sour cream with avocado and a little olive oil. Ensure cilantro is very dry before blending to avoid a watery sauce.
