Ingredients
  

Smoothie Base
  • 1 medium frozen banana Sliced before freezing
  • 1/4 medium avocado Ripe
  • 1/2 cup baby spinach Fresh, packed
  • 2 tablespoons Key lime juice Freshly squeezed or high-quality bottled
  • 1/2 teaspoon lime zest
  • 1/4 cup full-fat canned coconut milk The thick cream part
  • 1/2 cup unsweetened almond milk Or milk of choice
  • 1 tablespoon pure maple syrup Adjust to taste
  • 1/2 teaspoon vanilla extract
Rim & Garnish
  • 2 tablespoons graham cracker crumbs Finely crushed
  • 1 teaspoon maple syrup or agave For the rim
  • 2 tablespoons whipped coconut cream Or regular whipped cream
  • 1 tablespoon toasted coconut flakes
  • 1 slice fresh lime For garnish

Method
 

  1. Prepare your glass: Pour a teaspoon of maple syrup or agave onto a small plate. Place the finely crushed graham cracker crumbs on another small plate. Dip the rim of your serving glass into the syrup, then immediately into the crumbs to coat the edge. Set aside.
  2. Load the blender: Add the almond milk, canned coconut milk, Key lime juice, lime zest, maple syrup, and vanilla extract into the blender first.
  3. Add the solids: Next, add the fresh baby spinach, avocado, and the frozen banana chunks.
  4. Blend: Secure the lid and blend on high speed for 60 to 90 seconds, or until the mixture is completely smooth, creamy, and vibrant green with no spinach flecks remaining.
  5. Taste and adjust: Taste the smoothie. Add more lime juice if you want it tarter, or a splash more maple syrup if you prefer it sweeter. Blend for another 5 seconds if adjusted.
  6. Serve: Pour the smoothie carefully into the rimmed glass.
  7. Garnish: Top generously with whipped coconut cream, sprinkle with toasted coconut flakes, and garnish the edge of the glass with a fresh lime wheel. Enjoy immediately!

Notes

Tip: If you don't have a frozen banana ready, you can use a fresh banana and add 1/2 cup of ice, though the resulting smoothie will be slightly less creamy.
