Ingredients
  

Chicken & Marinade
  • 2 lbs chicken breast boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
Bowl Base
  • 1 cup jasmine rice uncooked
  • 2 cups water
  • 3 cups broccoli florets fresh
Creamy Garlic Sauce
  • 0.5 cup Greek yogurt plain
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tbsp water to thin

Method
 

  1. Rinse rice and cook with water in a saucepan. Simmer covered for 15-18 minutes until fluffy.
  2. Mix garlic powder, paprika, oregano, salt, and pepper in a small bowl.
  3. Rub chicken breasts with olive oil and the spice mix. Ensure even coating.
  4. Heat skillet over medium-high heat. Cook chicken 5-6 minutes per side until internal temp hits 165°F. Remove and rest.
  5. In the same skillet (or separate pot), steam broccoli with a splash of water for 3-4 minutes until tender-crisp.
  6. Whisk together yogurt, mayonnaise, lemon juice, minced garlic, and water until creamy.
  7. Slice chicken. Assemble bowl with rice, broccoli, and chicken. Drizzle generously with white sauce.

Notes

Store sauce separately if meal prepping. Reheat chicken and rice before adding the cold sauce for best texture.
