- Pat steak dry. In a bowl, toss steak with 1 tbsp olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Heat skillet over medium-high. Sear steak for 2-3 minutes per side until browned. Remove and set aside.
- Reduce heat to medium. Add butter to skillet. Sauté onion for 3-4 minutes. Add minced garlic, cook 1 minute.
- Pour in beef broth, scraping pan. Simmer 2-3 minutes to reduce slightly.
- Reduce heat to low. Stir in heavy cream.
- Add 0.5 cup Parmesan, parsley, and red pepper flakes (if using). Stir until cheese is melted and sauce is thick and gooey.
- Cook tortellini according to package directions in a separate pot of salted boiling water. Drain well.
- Add cooked tortellini and seared steak (with juices) to the skillet with the sauce.
- Gently toss everything together until coated and heated through (1-2 minutes). Taste and adjust seasoning.
- Serve immediately, garnished with extra Parmesan and parsley.
Notes
For best results, use freshly grated Parmesan cheese. If reheating, add a splash of beef broth or cream to loosen the sauce.
