Ingredients
  

Salad Base
  • 2 cans (5oz) tuna in water drained well
  • 0.33 cup mayonnaise full fat for best flavor
  • 0.25 cup red onion finely diced
  • 0.25 cup yellow bell pepper finely diced
  • 0.33 cup feta cheese crumbled
Seasoning
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 0.5 tsp black pepper coarse ground
  • 1 pinch salt to taste

Method
 

  1. Drain the cans of tuna thoroughly to remove excess liquid.
  2. In a medium bowl, flake the tuna with a fork into bite-sized chunks.
  3. Add the diced red onion, yellow bell pepper, crumbled feta cheese, mayonnaise, Dijon mustard, and lemon juice.
  4. Gently fold the mixture together until the tuna and vegetables are evenly coated with the dressing. Try not to over-mash so the feta stays distinct.
  5. Season with coarse black pepper and a pinch of salt if needed (taste first, as feta is salty).
  6. Serve immediately piled high on crackers, toasted bread, or over a bed of greens.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Stir before serving.
