Creamy Mushroom Ravioli Sauce

Pasta
  • 18-20 oz refrigerated cheese ravioli
Sauce
  • 1 lb cremini mushrooms baby bellas, wiped clean and sliced
  • 3 tbsp unsalted butter divided
  • 1 tbsp olive oil
  • 1 medium shallot finely minced
  • 3 cloves garlic minced
  • 0.5 cup dry white wine e.g., Pinot Grigio, or chicken broth
  • 1.5 cups heavy cream double cream
  • 0.5 cup parmesan cheese freshly grated, plus more for serving
  • 2 tbsp fresh parsley chopped
  • 1 pinch salt and black pepper to taste

Method
 

  1. Bring a large pot of salted water to a boil for the ravioli.
  2. In a large skillet over medium-high heat, melt 1.5 tbsp butter with the olive oil. Add sliced mushrooms in a single layer (cook in batches if needed). Cook undisturbed for 4 mins to sear.
  3. Stir mushrooms and continue cooking until deeply browned, about 8-10 mins total. Season with salt and pepper.
  4. While mushrooms cook, boil ravioli according to package directions. Reserve 1 cup of pasta water before draining.
  5. Reduce skillet heat to medium. Push mushrooms to the side. Add remaining 1.5 tbsp butter and minced shallot; cook 2 mins. Add garlic; cook 30 seconds.
  6. Deglaze the pan with white wine, scraping up browned bits. Simmer until reduced by half.
  7. Pour in heavy cream and bring to a gentle simmer for 3-5 mins until slightly thickened. Stir in Parmesan cheese until melted.
  8. Add drained ravioli to the sauce. Toss gently to coat. Add reserved pasta water a tablespoon at a time if needed to thin the sauce. Stir in parsley.
  9. Serve immediately topped with extra cheese and black pepper.

Notes

Ensure mushrooms are dry before cooking to ensure proper browning. Do not use pre-grated cheese as it may result in a grainy sauce.
