Method
- Pat chicken dry and season with salt, pepper, and Italian seasoning.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden. Remove chicken from pan and set aside.
- In the same skillet, add remaining oil and butter. Sauté red peppers for 2 minutes, then add minced garlic and cook for 30 seconds.
- Deglaze the pan with chicken broth, scraping up browned bits. Let reduce slightly.
- Lower heat to medium-low. Stir in heavy cream and pepperoncini juice. Bring to a gentle simmer.
- Stir in parmesan cheese until melted and sauce thickens. Add sliced pepperoncini peppers.
- Return chicken to the pan, nestling it into the sauce. Simmer for 2-3 minutes until chicken is cooked through.
- Garnish with fresh herbs and serve immediately.
Notes
For a thicker sauce, let it simmer a few minutes longer before adding the chicken back in. Serve with crusty bread to soak up the sauce.
