Ingredients
  

Base
  • 6 cups Rice Chex cereal or Corn Chex
  • 1.5 cups white chocolate chips high quality
  • 0.25 cup unsalted butter
  • 1 box instant pistachio pudding mix 3.4 oz box, dry powder only
Coating
  • 1.5 cups powdered sugar confectioners sugar
  • 0.75 cup pistachios shelled, roasted, salted, and chopped

  • Large microwave-safe bowl
  • Gallon Ziploc Bag
  • Rubber Spatula
  • Baking sheet

Method
 

  1. Measure Rice Chex into a very large bowl. Set aside.
  2. In a microwave-safe bowl, melt butter and white chocolate chips in 30-second intervals, stirring until smooth.
  3. Stir the DRY pistachio pudding mix into the melted chocolate mixture until combined and thickened.
  4. Pour the green mixture over the cereal. Gently fold with a spatula until evenly coated.
  5. Add powdered sugar to a gallon-size Ziploc bag. Add the coated cereal to the bag.
  6. Seal the bag and shake vigorously until cereal is coated in white sugar.
  7. Open bag, add chopped pistachios, reseal and give a final shake.
  8. Spread onto a baking sheet to set and cool for 15 minutes before serving.

Notes

Store in an airtight container for up to 1 week.
