Creamy Strawberry Greek Yogurt Jello

Ingredients
  

Base Ingredients
  • 1 box strawberry gelatin powder 3oz regular OR 0.3oz sugar-free
  • 1 cup boiling water
  • 1 cup Greek yogurt Plain, non-fat or whole milk
Optional Garnishes
  • 1/2 cup whipped cream
  • 4 halves fresh strawberries

Equipment

  • Heat-proof Mixing Bowl
  • Whisk or Blender
  • 4 Small Glasses or Ramekins

Method
 

  1. Empty the packet of gelatin powder into a heat-proof mixing bowl.
  2. Pour the boiling water over the gelatin powder. Whisk vigorously for at least 2 minutes until the powder is completely dissolved and the liquid is clear.
  3. Allow the hot gelatin mixture to sit at room temperature for 5 to 10 minutes to cool slightly.
  4. Add the cold Greek yogurt to the warm gelatin mixture.
  5. For the smoothest texture, pour the mixture into a blender and blend on medium speed for 20-30 seconds until completely smooth and slightly frothy. (Alternatively, whisk vigorously by hand until no lumps remain).
  6. Pour the mixture evenly into 4 small glass cups or ramekins.
  7. Place the cups in the refrigerator and chill for at least 2 hours, or until the dessert is fully set.
  8. Just before serving, top each glass with a dollop of whipped cream and a fresh strawberry half.

Notes

Storage: Cover tightly and store in the refrigerator for up to 4-5 days. Do not freeze. Note: Do not substitute regular yogurt for Greek yogurt, as it contains too much water and will prevent the dessert from setting properly.
