Method
- Empty the packet of gelatin powder into a heat-proof mixing bowl.
- Pour the boiling water over the gelatin powder. Whisk vigorously for at least 2 minutes until the powder is completely dissolved and the liquid is clear.
- Allow the hot gelatin mixture to sit at room temperature for 5 to 10 minutes to cool slightly.
- Add the cold Greek yogurt to the warm gelatin mixture.
- For the smoothest texture, pour the mixture into a blender and blend on medium speed for 20-30 seconds until completely smooth and slightly frothy. (Alternatively, whisk vigorously by hand until no lumps remain).
- Pour the mixture evenly into 4 small glass cups or ramekins.
- Place the cups in the refrigerator and chill for at least 2 hours, or until the dessert is fully set.
- Just before serving, top each glass with a dollop of whipped cream and a fresh strawberry half.
Notes
Storage: Cover tightly and store in the refrigerator for up to 4-5 days. Do not freeze. Note: Do not substitute regular yogurt for Greek yogurt, as it contains too much water and will prevent the dessert from setting properly.
