Ingredients
  

Filling
  • 10 oz frozen chopped spinach thawed and squeezed very dry
  • 4 oz cream cheese softened
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded
  • 1 large egg lightly beaten
  • 1 clove garlic minced
  • 0.5 tsp onion powder
  • 0.25 tsp black pepper
Coating
  • 0.75 cup Panko breadcrumbs
  • 1 tbsp unsalted butter melted (optional)

  • Kitchen Towel (for drying spinach)

Method
 

  1. Thaw spinach and squeeze out as much liquid as possible using a kitchen towel.
  2. In a large bowl, combine dried spinach, cream cheese, Parmesan, mozzarella, egg, garlic, onion powder, pepper, and salt. Mix thoroughly.
  3. Refrigerate the mixture for 30 minutes to firm up (optional but recommended).
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  5. Combine Panko breadcrumbs and melted butter (if using) in a shallow dish.
  6. Roll the spinach mixture into 1-inch balls, then coat each ball in the breadcrumbs.
  7. Place on the prepared baking sheet and bake for 15-18 minutes until golden brown. Let cool slightly before serving.

Notes

Serve with warm marinara or ranch for dipping. Ensure spinach is very dry to prevent soggy bites.
