Method
- Cut chicken into bite-sized cubes. Soak in buttermilk for 20 minutes.
- Mix mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl. Set aside.
- In a separate shallow bowl, whisk cornstarch, flour, and spices.
- Heat frying oil in a heavy pot to 350°F (175°C).
- Dredge chicken pieces in the flour mixture, pressing to coat well.
- Fry in batches for 4-6 minutes until golden brown. Drain on a wire rack.
- Transfer to a serving plate. Drizzle generously with the prepared sauce.
- Garnish with fresh chives and sesame seeds. Serve immediately.
Notes
For a lighter version, air fry at 400°F for 12 minutes, spraying the chicken generously with oil before cooking.
