Ingredients
  

Chicken Marinade
  • 1.5 lbs chicken breast or thighs cubed
  • 1 cup buttermilk
Crispy Coating
  • 1 cup cornstarch
  • 0.5 cup flour all-purpose
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tsp honey
Garnish
  • 2 tbsp chives chopped
  • 1 tbsp sesame seeds

Equipment

  • Dutch oven or Deep Fryer
  • Mixing bowls
  • Whisk
  • Wire rack

Method
 

  1. Cut chicken into bite-sized cubes. Soak in buttermilk for 20 minutes.
  2. Mix mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl. Set aside.
  3. In a separate shallow bowl, whisk cornstarch, flour, and spices.
  4. Heat frying oil in a heavy pot to 350°F (175°C).
  5. Dredge chicken pieces in the flour mixture, pressing to coat well.
  6. Fry in batches for 4-6 minutes until golden brown. Drain on a wire rack.
  7. Transfer to a serving plate. Drizzle generously with the prepared sauce.
  8. Garnish with fresh chives and sesame seeds. Serve immediately.

Notes

For a lighter version, air fry at 400°F for 12 minutes, spraying the chicken generously with oil before cooking.
