Chicken & Breading
  • 2 large boneless skinless chicken breasts halved horizontally
  • 0.5 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs
  • 0.5 cup Parmesan cheese grated
  • 0.33 cup olive oil for frying
Garlic Butter Sauce
  • 4 tbsp unsalted butter cold, cubed
  • 4 cloves garlic minced
  • 0.5 cup chicken broth low-sodium
  • 0.25 cup heavy cream optional
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp fresh parsley finely chopped

Method
 

  1. Pound chicken breast halves to an even 1/4-inch thickness. Pat dry with paper towels.
  2. Prepare breading station: whisk flour and spices in one dish, beat eggs in a second, and mix Panko with Parmesan in a third.
  3. Dredge chicken in flour, dip in egg, then press firmly into the Panko mixture to coat evenly.
  4. Heat oil in a large skillet over medium-high heat. Fry chicken for 3-4 minutes per side until golden brown and cooked through. Transfer to a wire rack.
  5. Wipe out excess oil from the skillet, leaving about 1 tablespoon. Lower heat to medium-low and sauté minced garlic for 30 seconds.
  6. Pour in chicken broth to deglaze, scraping up browned bits. Simmer for 2 minutes.
  7. Reduce heat to low. Whisk in heavy cream (if using), then slowly whisk in cold butter cubes one at a time until the sauce is glossy and emulsified.
  8. Stir in lemon juice and parsley. Spoon the sauce generously over the crispy chicken cutlets and serve.

Notes

Let the breaded chicken rest for 10 minutes before frying to help the crust adhere better.
