Ingredients
  

Pineapple Rings
  • 1 fresh pineapple peeled, cored, and sliced into rings
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 large eggs beaten
  • 1.5 cups shredded coconut sweetened or unsweetened based on preference
  • 0.5 cup Panko breadcrumbs
  • 2 cups vegetable oil for frying
Tropical Dipping Sauce
  • 0.5 cup mayonnaise or greek yogurt
  • 1 tbsp Sriracha adjust to taste
  • 1 tsp honey
  • 1 tsp lime juice

Equipment

  • Heavy skillet or Dutch oven
  • Wire rack
  • 3 Shallow bowls
  • Pineapple Corer

Method
 

  1. Peel and core the pineapple. Slice into 1/2-inch thick rings. Pat each ring thoroughly dry with paper towels.
  2. Prepare 3 bowls: Bowl 1 with flour and cornstarch mixed. Bowl 2 with beaten eggs. Bowl 3 with shredded coconut and Panko mixed.
  3. Heat oil in a skillet to 350°F (175°C).
  4. Dredge a pineapple ring in flour, shake off excess. Dip into egg wash, then press firmly into coconut mixture to coat.
  5. Fry 2-3 rings at a time for 2-3 minutes per side until golden brown and crispy.
  6. Remove and drain on a wire rack. Sprinkle immediately with a pinch of salt.
  7. Whisk together sauce ingredients in a small bowl.
  8. Serve pineapple rings warm with the dipping sauce.

Notes

If using canned pineapple, ensure it is drained and dried extremely well, or the coating will slide off during frying.
