Ingredients
  

The Fries
  • 3 large Russet potatoes scrubbed and cut into wedges
  • 3 tbsp olive oil
  • 1 tbsp cornstarch optional, for crispiness
  • 1 tsp garlic powder
  • 1 tsp sea salt coarse
  • 0.25 cup fresh parsley chopped
Garlic Aioli
  • 0.5 cup mayonnaise
  • 1 clove garlic grated
  • 1 tsp lemon juice
  • 1 pinch black pepper

  • Large mixing bowl
  • Chef's knife
  • Parchment paper

Method
 

  1. Cut potatoes into uniform wedges or thick strips. Soak in cold water for 30 minutes to remove excess starch.
  2. Preheat oven to 425°F (220°C). Drain potatoes and pat them completely dry with towels.
  3. Toss potatoes with cornstarch, oil, garlic powder, and onion powder in a large bowl until evenly coated.
  4. Arrange in a single layer on a parchment-lined baking sheet, ensuring they do not touch.
  5. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  6. While baking, mix mayonnaise, fresh garlic, lemon juice, and pepper to create the aioli.
  7. Remove fries from oven, immediately toss with salt and fresh parsley. Serve hot with the dipping sauce.

Notes

Soaking the potatoes is the secret to getting them crispy. Do not skip this step! For spicy fries, add a pinch of cayenne pepper to the seasoning mix.
